Recipe: Garlic Parmesan Shrimp

If you’re looking for an easy-to-make appetizer that is going to be the star of your Christmas or New Year’s party, this is the one! The shrimp alone are a treat, but make sure you serve it with plenty of bread to soak up all that buttery goodness in the skillet!

GARLIC PARMESAN SHRIMP

INGREDIENTS
1 pound of shrimp, deveined, rinsed, and peeled (but leave on the tail peel)
1 ½ sticks salted butter
cracked black pepper, to taste
2 tablespoons dried parsley
2 garlic cloves, microplaned
1 lemon; half for juice and half cut into slices
small block of Parmesan cheese
green onions, cut diagonally for garnish 
1 loaf French bread, toasted

PREPARATION
I cooked these in an outdoor pizza oven. You can use your indoor oven, too—but who would really want to cook inside when you can be outside? Preheat oven to 400℉.

While preheating, lay the shrimp on an oven-safe skillet and add some lemon slices for garnish. I used cast iron on this recipe and lightly oiled the skillet with olive oil.

To make butter sauce, melt butter in a sauce pan over medium-low heat. Add black pepper, parsley, garlic, and juice of half a lemon. Don’t skimp—use a real lemon.

Once sauce is melted, pour over the shrimp and place skillet in the oven. You want to rotate these after 5 minutes to make sure they cook evenly. Check again after another 5 minutes passes. Every oven cooks differently, so the time is just a guideline. Once the shrimp are a nice pink color and the butter is sizzling, they are done. Remove from oven and grate Parmesan cheese over the top, creating a finishing cover.  

Once pulled from the oven, garnish with green onion and serve with toasted French bread. I love to place this in middle of the table when we have friends over so everyone can grab want they want and, of course, dip their bread in the buttery sauce.
